I came up with this one on a cold Kentucky evening when I wanted jalapeno poppers but also wanted soup and could not decide between the two. Turns out you do not have to. You just make both at the same time and combine them into one outrageously good meal that nobody at your table will see coming.

How do I control the spice level in this soup?

The jalapenos are your main heat lever here. For a mild soup remove all the seeds and white membrane from every jalapeno before dicing — most of the heat lives there. For medium heat remove seeds from half of them. For a genuinely spicy soup leave everything in and add an extra jalapeno for good measure. You can also stir in a teaspoon of hot sauce at the end if you want more heat without adding more jalapeno flavor specifically.

Can I make this soup vegetarian?

Yes with a couple of swaps. Replace the bacon with a plant-based bacon alternative or simply skip it and add a teaspoon of smoked paprika and a drizzle of liquid smoke to compensate for that smoky depth.
