Can I use chicken thighs instead of chicken breasts?

Absolutely and honestly boneless skinless chicken thighs might even be the better choice here. They have a slightly higher fat content which means more flavor and a more forgiving cook time. They will not dry out as quickly as breasts if you slightly overshoot the cooking time. Use the same spice rub and the same cooking method — the result will be incredibly juicy.

Can I use canned corn instead of fresh or frozen?

You can but you need to drain and dry it very thoroughly before adding it to the hot pan. Canned corn holds a lot of moisture and if it hits the pan wet it will steam rather than char. Spread it on a paper towel and pat it dry for a few minutes before cooking. Fresh or frozen corn that has been thawed and dried will always give you a better char but canned corn in a pinch is perfectly fine.

What can I use instead of cilantro in the sauce?

Fresh flat leaf parsley is the best substitute and it works really well in the sauce. It gives you a similar fresh herby quality without the polarizing flavor that cilantro has for some people. You could also try fresh mint for a slightly different but equally bright result.
