The skins will slip right off. Once peeled, slice the peaches and divide them into two equal portions.

Step 3: Prep the molds Set your popsicle molds on a flat, stable surface. If you don’t have popsicle molds, small paper cups with wooden popsicle sticks work perfectly as a substitute. Make sure your molds are clean and dry before you start filling them.
Step 4: Add the fresh peach slices Take the remaining portion of fresh peach slices and divide them evenly among the popsicle molds. Press a few slices down the sides and into the bottom of each mold. These whole fruit pieces are what create those beautiful pockets of fresh peach texture throughout the finished popsicle — they add a burst of fresh fruit flavor that makes every bite a little different and a lot more interesting.
Step 5: Pour in the blended mixture Carefully pour the blended peach and yogurt mixture into each mold over the fresh peach slices, filling each one to about a quarter inch from the top. Leave a small gap at the top because the mixture expands slightly as it freezes. Tap the molds gently on the counter a few times to release any air bubbles and help the mixture settle around the peach slices.
Step 6: Insert the sticks and freeze Place the popsicle sticks into the center of each mold. If your molds have a lid that holds the sticks in place, use that. If not, freeze the popsicles for about 45 minutes until partially frozen — just enough to hold a stick upright — then insert the sticks. Cover the molds and freeze for a minimum of 8 hours or overnight until completely solid.
Step 7: Unmold and serve To unmold the popsicles, run the outside of the molds under warm water for 15 to 20 seconds. Don’t use hot water — it melts the popsicle too quickly. Just warm water run over the outside of the mold is enough to loosen the popsicle so it slides out cleanly. Serve immediately.

Unmolding tips: If a popsicle is being stubborn and won’t release from the mold, run the mold under warm water for a little longer — up to 30 seconds. Patience is the key here. Trying to force it out risks breaking the popsicle and nobody wants that after waiting eight hours for them to freeze.
Make-ahead: These popsicles are designed to be made ahead. The whole point is to have them ready and waiting in the freezer. Make a double batch when peaches are at peak season and you’ll have frozen treats ready all summer long with zero additional effort.
