There’s a specific kind of summer afternoon that calls for a cold, creamy, fruit-forward frozen treat and absolutely nothing else. You know the one — it’s too hot to cook, too hot to think, and the only reasonable response to the weather is to stand in front of the open freezer for longer than is strictly necessary.

The skins will slip right off. Once peeled, slice the peaches and divide them into two equal portions.

Step 2: Blend the cream base Add one portion of the peach slices to a blender along with the Greek yogurt, maple syrup, and cinnamon. Step 3: Prep the molds Set your popsicle molds on a flat, stable surface. If you don’t have popsicle molds, small paper cups with wooden popsicle sticks work perfectly as a substitute. Make sure your molds are clean and dry before you start filling them.

Step 4: Add the fresh peach slices Take the remaining portion of fresh peach slices and divide them evenly among the popsicle molds. Press a few slices down the sides and into the bottom of each mold. These whole fruit pieces are what create those beautiful pockets of fresh peach texture throughout the finished popsicle — they add a burst of fresh fruit flavor that makes every bite a little different and a lot more interesting.

Step 5: Pour in the blended mixture Carefully pour the blended peach and yogurt mixture into each mold over the fresh peach slices, filling each one to about a quarter inch from the top. Leave a small gap at the top because the mixture expands slightly as it freezes. Tap the molds gently on the counter a few times to release any air bubbles and help the mixture settle around the peach slices.

Step 6: Insert the sticks and freeze Place the popsicle sticks into the center of each mold. If your molds have a lid that holds the sticks in place, use that. If not, freeze the popsicles for about 45 minutes until partially frozen — just enough to hold a stick upright — then insert the sticks. Cover the molds and freeze for a minimum of 8 hours or overnight until completely solid.

Step 7: Unmold and serve To unmold the popsicles, run the outside of the molds under warm water for 15 to 20 seconds. Don’t use hot water — it melts the popsicle too quickly. Just warm water run over the outside of the mold is enough to loosen the popsicle so it slides out cleanly. Serve immediately.

  • Straight from the freezer on a hot day — Sometimes the only serving suggestion you need is “eat it immediately before it melts.” These popsicles are at their absolute best when pulled straight from the freezer on a genuinely hot summer afternoon. No plate, no garnish, no occasion required.
  • On a dessert board — Arrange the popsicles on a wooden board alongside fresh peach slices, berries, a small bowl of honey for drizzling, and a few sprigs of fresh mint for a stunning and refreshing summer dessert spread that looks incredibly impressive with virtually zero effort.
  • Drizzled with honey and a pinch of cinnamon — Right before serving, drizzle a little extra honey over the popsicle and dust with a pinch of cinnamon. It adds a beautiful glossy finish and an extra layer of sweetness that makes them feel a little more special.

Unmolding tips: If a popsicle is being stubborn and won’t release from the mold, run the mold under warm water for a little longer — up to 30 seconds. Patience is the key here. Trying to force it out risks breaking the popsicle and nobody wants that after waiting eight hours for them to freeze.

Make-ahead: These popsicles are designed to be made ahead. The whole point is to have them ready and waiting in the freezer. Make a double batch when peaches are at peak season and you’ll have frozen treats ready all summer long with zero additional effort.

Yes and this is actually a great option when fresh peaches are out of season. Use frozen peach slices that have been fully thawed and drained of any excess liquid before blending. Frozen peaches tend to be picked and frozen at peak ripeness which means they often have great flavor year-round. The texture of the whole fruit pieces inside the popsicle will be slightly softer than fresh peach but the flavor is still excellent. For the best results with frozen peaches add them directly to the blender from thawed — do not refreeze without blending first.

Do I need a special popsicle mold for this recipe?

A proper popsicle mold gives you the cleanest results but it is absolutely not required. Small paper or plastic cups work perfectly as a substitute — fill them with the mixture, cover the top with a small piece of aluminum foil, poke a popsicle stick through the center of the foil, and freeze. Absolutely. Substitute the Greek yogurt with full fat coconut yogurt for a completely dairy free version that is still incredibly creamy and delicious. Just make sure whatever yogurt you use is full fat for the best creamy texture.
