There's a specific kind of summer afternoon that calls for a cold, creamy, fruit-forward frozen treat and absolutely nothing else. You know the one — it's too hot to cook, too hot to think, and the only reasonable response to the weather is to stand in front of the open freezer for longer than is strictly necessary.
That was the afternoon these peaches and cream popsicles came into my life and honestly I haven't looked at store-bought popsicles the same way since.
I made the first batch on a whim because I had a bowl of ripe peaches on the counter that were one day away from being too soft to eat and a container of Greek yogurt that needed to be used up.
Four ingredients, a blender, and a popsicle mold later, I had the most refreshing, naturally sweet, creamy frozen treat I'd ever made in my own kitchen. The kind that tastes like summer actually tastes — not like artificial peach flavoring and sugar syrup, but like a real ripe peach that someone somehow turned into the perfect frozen dessert.
What I love most about this recipe is how effortlessly healthy it is without trying to be. There's no heavy cream, no refined sugar, no long list of ingredients you have to hunt down.
Just ripe peaches, Greek yogurt, a little maple syrup, and a pinch of cinnamon. That's it. The result is something that feels indulgent enough to satisfy a dessert craving while being wholesome enough that you can hand one to your kid without a second thought. Let's make them.
Step 1: Prep the peaches Wash, peel, and slice your ripe peaches. To peel peaches easily, score a small X on the bottom of each peach with a sharp knife, blanch them in boiling water for 30 seconds, then transfer immediately to a bowl of ice water. The skins will slip right off. Once peeled, slice the peaches and divide them into two equal portions.
Step 2: Blend the cream base Add one portion of the peach slices to a blender along with the Greek yogurt, maple syrup, and cinnamon. Blend on high until completely smooth and creamy — about 60 seconds. Taste the mixture and adjust sweetness if needed by adding a little more maple syrup. The blended mixture should be smooth, fragrant, and taste like a really good peach smoothie. Set aside.
Step 3: Prep the molds Set your popsicle molds on a flat, stable surface. If you don't have popsicle molds, small paper cups with wooden popsicle sticks work perfectly as a substitute. Make sure your molds are clean and dry before you start filling them.
Step 4: Add the fresh peach slices Take the remaining portion of fresh peach slices and divide them evenly among the popsicle molds. Press a few slices down the sides and into the bottom of each mold. These whole fruit pieces are what create those beautiful pockets of fresh peach texture throughout the finished popsicle — they add a burst of fresh fruit flavor that makes every bite a little different and a lot more interesting.
Step 5: Pour in the blended mixture Carefully pour the blended peach and yogurt mixture into each mold over the fresh peach slices, filling each one to about a quarter inch from the top. Leave a small gap at the top because the mixture expands slightly as it freezes. Tap the molds gently on the counter a few times to release any air bubbles and help the mixture settle around the peach slices.
Step 6: Insert the sticks and freeze Place the popsicle sticks into the center of each mold. If your molds have a lid that holds the sticks in place, use that. If not, freeze the popsicles for about 45 minutes until partially frozen — just enough to hold a stick upright — then insert the sticks. Cover the molds and freeze for a minimum of 8 hours or overnight until completely solid.
Step 7: Unmold and serve To unmold the popsicles, run the outside of the molds under warm water for 15 to 20 seconds. Don't use hot water — it melts the popsicle too quickly. Just warm water run over the outside of the mold is enough to loosen the popsicle so it slides out cleanly. Serve immediately.
These peaches and cream popsicles are perfect on their own but here are a few fun ways to take them a little further.
Freezer storage: Once fully frozen, you can keep the popsicles in their molds or transfer them to individual zip-lock freezer bags for easier storage. They keep well in the freezer for up to 6 weeks. After that they can start to develop ice crystals and the texture begins to deteriorate. Realistically though they will be gone long before six weeks is up.
Preventing freezer burn: If storing out of the molds, wrap each popsicle individually in plastic wrap before placing in a freezer bag. This extra layer protects against freezer burn and keeps the texture creamy and smooth.
Unmolding tips: If a popsicle is being stubborn and won't release from the mold, run the mold under warm water for a little longer — up to 30 seconds. Patience is the key here. Trying to force it out risks breaking the popsicle and nobody wants that after waiting eight hours for them to freeze.
Make-ahead: These popsicles are designed to be made ahead. The whole point is to have them ready and waiting in the freezer. Make a double batch when peaches are at peak season and you'll have frozen treats ready all summer long with zero additional effort.
